Ingredients
Scale
- 1 lb of fresh or frozen smelt (cleaned and gutted)
- 1 cup of all-purpose flour
- 1 tsp of salt
- ½ tsp of black pepper
- ½ cup of olive oil (or any neutral frying oil)
- Lemon wedges (for serving)
Instructions
- Prepare the Smelt: Rinse the smelt fish thoroughly and pat them dry with paper towels to remove excess moisture.
- Mix the Coating: In a shallow dish, combine the flour, salt, and pepper. Stir well to evenly blend the seasoning.
- Coat the Fish: Lightly dredge each smelt in the flour mixture, ensuring even coverage. Shake off any excess flour.
- Heat the Oil: Pour olive oil into a skillet and heat over medium heat until shimmering.
- Fry the Fish: Lay the smelt in the skillet in a single layer. Cook for 2–3 minutes per side, or until golden brown and crispy. Avoid overcrowding.
- Serve and Enjoy: Remove the smelt from the skillet, drain on paper towels, and serve hot with lemon wedges for extra flavor.
Notes
- Use fresh smelt for the best flavor, but frozen smelt works well too.
- Adjust the seasoning to your preference by adding paprika or garlic powder to the flour mixture.
