  • ½ tsp of black pepper

  • Lemon wedges (for serving)

Instructions

  • Prepare the Smelt: Rinse the smelt fish thoroughly and pat them dry with paper towels to remove excess moisture.
  • Mix the Coating: In a shallow dish, combine the flour, salt, and pepper. Stir well to evenly blend the seasoning.
  • Coat the Fish: Lightly dredge each smelt in the flour mixture, ensuring even coverage. Shake off any excess flour.
  • Heat the Oil: Pour olive oil into a skillet and heat over medium heat until shimmering.
  • Fry the Fish: Lay the smelt in the skillet in a single layer. Cook for 2–3 minutes per side, or until golden brown and crispy. Avoid overcrowding.
  • Serve and Enjoy: Remove the smelt from the skillet, drain on paper towels, and serve hot with lemon wedges for extra flavor.

Notes

  • Use fresh smelt for the best flavor, but frozen smelt works well too.
