Ingredients

  • 1 pound ground sausage (Italian or hot sausage)
  • 2 bell peppers, sliced (red, yellow, or green)
  • 1 zucchini, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add ground sausage and cook until browned, breaking it into crumbles. Remove from the skillet and set aside.
  • In the same skillet, sauté the onion and garlic until fragrant (about 2 minutes).
  • Add the bell peppers and zucchini. Cook until tender-crisp, stirring occasionally (about 5 minutes).
  • Return the cooked sausage to the skillet. Sprinkle with Italian seasoning, salt, and pepper. Stir to combine and heat through.
