Ingredients

Vegetables:
- ½ cup diced onions

Instructions

3️⃣ Add the dairy & seasonings – Stir in cottage cheese, milk, salt, black pepper, and smoked paprika. Mix well.
4️⃣ Sauté the vegetables – In a skillet over medium heat, cook onions, bell peppers, and spinach for 3-4 minutes until softened.
5️⃣ Assemble the casserole – Pour the egg mixture into the prepared baking dish. Evenly distribute the sautéed veggies on top.
6️⃣ Add cheese & protein (if using) – Sprinkle shredded cheese and any cooked meats over the top.
7️⃣ Bake for 25-30 minutes or until the eggs are set and the top is slightly golden.
