Ingredients

Scale
  • 2 pounds venison (chilled and ground)
  • 1 pound pork fat (chilled and ground)
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 1 teaspoon fennel seeds
  • 1 teaspoon dried thyme
  • Natural sausage casings (rinsed and soaked)

Instructions

  • Step 1: Grind the venison and pork fat together using a chilled grinder.
  • Step 2: Combine the salt, pepper, garlic powder, paprika, fennel seeds, and thyme in a small bowl. Sprinkle over the ground meat and mix thoroughly.
  • Step 3: Rinse the casings under cold water and soak them in warm water for 30 minutes.
  • Step 4: Using a sausage stuffer, carefully fill the casings with the meat mixture. Do not overfill.
  • Step 5: Twist the sausages into links at your desired length. Tie the ends with butcher’s twine if needed.
  • Step 6: Grill, smoke, or pan-fry the sausages until they reach an internal temperature of 160°F (71°C).

Notes

  • Cooking Tip: Chill your tools and meat to prevent the fat from melting during grinding and mixing.
  • Serving Suggestion: Pair with roasted potatoes or a light arugula salad.
  • Storage: Store uncooked sausages in the refrigerator for up to 3 days or freeze for up to 6 months.
